PEANUT BUTTER CRISSCROSS COOKIES 
1 1/2 c. all purpose flour
1/2 tsp. baking soda
1/2 c. butter flavor Crisco, room temperature
1 c. peanut butter
1/2 c. packed brown sugar
1/2 c. granulated sugar
1 lg. egg
1 tsp. vanilla

Heat oven to 375 degrees. Have cookie sheets ready. Mix flour and soda. Beat Crisco and peanut butter in large bowl with mixer until creamy. Add sugars, beat until fluffy. Beat in egg and vanilla until well blended. With mixer on low, gradually beat in flour mixture just until blended. Roll heaping teaspoonsful of dough into balls. Place 1 1/2 inches apart on ungreased sheets. Flatten with tines of fork, making crisscross design. Bake 10-12 minutes until lightly browned. Cool completely. 350 degree oven. Store tightly covered. Makes 60.
