PEANUT BUTTER OATMEAL COOKIES 
3/4 c. butter flavored Crisco
1 c. peanut butter
1 1/2 c. firmly packed brown sugar
1/2 c. water
1 egg
1 tsp. vanilla
3 c. old fashioned Quaker oats
1 1/2 c. all-purpose flour
1/2 tsp. baking soda

Beat Crisco, peanut butter and brown sugar until smooth. Beat in water, egg and vanilla. Add combined dry ingredients. Mix well. Cover and chill about 2 1/2 hours.

Heat oven to 350 degrees. Shape into 3/4" balls. Place on ungreased cookie sheet. Flatten with tines of a fork dipped in granulated sugar and form criss-cross pattern across cookie. Bake 9 to 11 minutes or until edges are golden brown. Cool 1 minute. Store tightly closed.
