PEANUT BUTTER OAT COOKIES 
1/2 c. brown sugar, firmly packed
1/2 c. butter
1 egg
1/2 tsp. vanilla
1/2 c. creamy peanut butter
3/4 c. ground oat flour
1/4 tsp. baking soda
1/8 tsp. salt
3/4 c. Quaker oats, quick or old fashioned, uncooked
1/2 c. butterscotch pieces or peanut butter chips

For the ground oat flour, place 1 1/2 cups of the oats, uncooked, in a blender or processor. Cover and blend about 1 minute.

Heat oven to 375 degrees. Beat together the sugar and butter until light and fluffy. Blend in egg and vanilla. Stir in peanut butter and mix well. Combine oat flour, soda, and salt and add to the peanut butter mixture, mixing well. Stir in oats and butterscotch pieces. drop by spoonfuls onto ungreased cookie sheets and bake for 10-12 minutes. Remove and cool completely on wire rack. This yields about 2 to 2 1/2 dozen.
