MOM'S RAISIN DRESSING
6 c. cubed, dry bread
1 c. raisins
1 onion, minced
1 c. chopped celery
1/4 c. bacon drippings
1 tsp. poultry seasoning
1 tsp. salt
Dash of pepper
2 eggs, beaten
3/4 c. milk or water

Saute raisins, onions and celery in bacon drippings until tender. Add poultry seasoning, salt and pepper; mix well. Combine milk and eggs. Put cubed bread in large mixing bowl; add remaining ingredients and mix well.

This may be baked in a greased or foil-lined casserole dish, uncovered, at 350 degrees until browned, 1 to 1 1/2 hours. Serves 4 to 6. It may also be used to stuff a chicken or turkey and is excellent with pork chops or roast when a can of crushed pineapple or chunks is added.
