BUTTERMILK PANCAKES 
Makes 16 (4 inch) pancakes.

2 c. sifted flour
1/2 tsp. baking soda
4 tsp. sugar
2 eggs, well beaten
2 tsp. baking powder
1/4 tsp. salt
1/4 c. melted shortening
2 c. buttermilk

Sift dry ingredients together and add beaten eggs and buttermilk. Add melted shortening and mix well. Bake on a hot, lightly-greased griddle and turn only once.
