RICOTTA COOKIES 
1/4 lb. soft butter
1/4 c. ricotta cheese
1 c. sugar
1 egg
2 c. sifted flour
1/2 tsp. baking soda
1/2 tsp. salt

Blend butter and ricotta until creamy, add vanilla and sugar. Mix well. Add egg and mix. Slowly stir in flour mixture and mix well. Drop by teaspoon on greased cookie sheet. Bake at 350 degrees for 10 minutes.
