SWEET POTATO PUDDING 
1 lg. peeled sweet potato, finely grated
4 eggs
3 tbsp. yellow cornmeal
1 1/4 c. sugar
1 tbsp. orange peel, grated or extract
1 c. milk
1 tbsp. vanilla
1 stick butter, melted

Beat eggs and blend with cornmeal, sugar and orange peel. Stir in sweet potatoes, milk, vanilla and butter. Stir until blended. Bake in oven at 350 degrees for 1 hour.
