GRATED SWEET POTATO PUDDING 
2 med. sweet potatoes, grated
Juice of 1 lemon
2/3 c. sugar
2 eggs
1 c. milk
1 tsp. cinnamon
1/2 tsp. ginger
2 tsp. vanilla
1/2 c. melted butter

Grate sweet potatoes. Stir lemon juice and sugar into potatoes. Beat in eggs. Add milk and seasoning; stir in melted butter. Pour into a greased 1 1/2 quart casserole. Bake at 350 degrees until crusty and firm, about 1 to 1 1/4 hours.
