HONEY GRAHAM CRACKERS 
2 c. whole wheat flour
1 c. unbleached flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 c. packed brown sugar
1/2 c. butter
1/3 c. honey
1 tsp. vanilla
1/2 c. milk
3 tbsp. sugar (opt.)
1 tbsp. ground cinnamon (opt.)

Sift together first 4 ingredients. Cream together brown sugar and butter until smooth. Add honey and vanilla. Beat until fluffy. Add flour to creamed mixture, alternately with milk, beating well after each addition. Chill dough overnight. Divide dough into quarters.

On well floured surface roll out each quarter to 5"x15". Cut into small rectangles. Place on ungreased cookie sheet. Mark a line at center of each and score with holes. May combine sugar and cinnamon and sprinkle lightly over crackers. Bake in preheated 350 degree oven for 13 to 15 minutes. Remove, cool on rack.
