LARGE WILD GAME CHICKEN FRIED STEAK | |
Pre-preparation: Defrost your selection of game meat in a solution of approximately 1/4 cup salt to 1 gallon of cold water, with enough of this mixture to completely cover the meat. When completely thawed, soak 1 hour and remove from solution. Any cuts of game may be pre-prepared in this manner, and then coked as any beef, pork, lamb or veal recipe. Cut 1 to 1 1/2 pounds of game steak pieces into finger strips or serving size pieces. Soak in mixture of 2 beaten eggs and 1 cup of milk. Season to taste with salt, pepper and paprika. Roll in flour mixture of flour, salt, pepper and paprika. Deep fry in very hot grease, squeezing lemon over it as it fries. |
