MUSHROOM CHEESE BAKE 
3 lbs. fresh mushrooms
1 c. heavy cream
1/2 c. butter
1 tsp. salt
3 c. grated Gruyere or Swiss cheese
1/2 tsp. pepper
1/8 tsp. cayenne
Parsley

Preheat oven to 400 degrees. In large skillet over medium heat saute mushrooms in butter 5 minutes. Add cream; cook and stir until cream is almost absorbed. Mix in salt, pepper and cayenne.

Pour into a greased 2-quart shallow baking dish. Sprinkle with cheese. Bake 10 minutes or until cheese is lightly browned. Garnish with parsley sprigs. Serves 12.
