BAKED STUFFED MUSHROOMS 
1 lb. fresh mushrooms
1 sm. onion, minced
2 cloves garlic, chopped fine
2 tsp. chopped parsley
1 pkg. Ritz crackers, crushed fine
3 tsp. cooking sherry
Pepper to taste
5 slices American cheese

Wash mushrooms, pat dry and remove stems. Chop stems fine. Melt butter, add garlic, onion and stems. Saute for 3 minutes. Crush crackers - one whole wrapped stack - not the whole box. Add cracker crumbs to the butter, add parsley, sherry and pepper to taste. Cool 10 minutes.

Stuff mushroom caps with mixture. Cut each piece of cheese in 6 and place one portion on each mushroom. Bake at 375 degrees 12-15 minutes.
