BAKED STUFFED MUSHROOMS | |
1 lb. lg. mushrooms 1 1/2 c. fresh bread crumbs 1/3 c. grated Parmesan cheese 2 sprigs parsley, chopped 1/2 clove garlic, crushed Salt and pepper 3 tbsp. olive oil Remove the stems of the mushrooms and peel the caps. Chop the stems fine and add to the crumbs, grated cheese, chopped parsley, garlic, oil, and seasonings. Fill the cavity of half the mushroom caps with this mixture and top with the remaining caps. Arrange in a baking dish brushed with olive oil. Bake about 1/2 hour at 350 degrees. |
