TEXAS PIE 
3 whole eggs, beaten
2 c. sugar
2 tbsp. flour
2 tbsp. cornmeal
1 small can crushed pineapple
a little lemon juice (optional)
1 c. flaked coconut
1 stick butter, softened
1 tsp. vanilla

Mix together all the ingredients. Pour into unbaked pie shell.

Bake 5 minutes at 425°F, then bake for 1 hour at 325°F.
