BEAN POT CHICKEN 
2 med. broilers or fryers, cut into serving pieces
1/2 c. butter
Salt and pepper
Paprika
6 med. onions, peeled
Heavy cream

Put chicken pieces in a bean pot or heavy casserole together with salt, pepper, and paprika. Place whole onions and butter on top. Add just enough water to almost cover. Cover the pot and bake in a preheated oven at 325 degrees for 3 hours. Pour the juices into a saucepan and reduce liquid slightly, over moderate heat. Stirring constantly, add enough heavy cream to thicken sauce to desired thickness. Taste for seasoning. Strain. Pour over the chicken. Serve right from the pot with rice.
