GREEN SALAD WITH LIME DRESSING 
2 lg. heads Romaine lettuce, washed and dried
1/2 lb. jicama, peeled and julienned

DRESSING:

3/4 c. olive oil
1/4 c. fresh lime juice
2 tbsp. sugar
1/4 tsp. ground ginger
Pinch cayenne
Salt, freshly ground pepper to taste

Tear lettuce into small pieces and place in salad bowl or divide evenly among 8 plates. Top with jicama.

Make dressing: Combine all ingredients together in a jar and shake vigorously. Pour over greens; toss well. Serves 8.
