SPANISH-STYLE CHICKEN 
5 lb. chicken, boiled
Flour
Salt and paprika
1/2 c. butter
1 lg. onion, grated
1 clove garlic, grated
1 green pepper, chopped
2 c. tomatoes, strained
1 lb. mushrooms, sauteed
Seasoning as desired
Minced parsley
Minced chives

Remove chicken meat from bones in large pieces. Dredge with flour mixed with salt and paprika. Brown in hot butter and remove to a casserole. Simmer onion, garlic and green pepper in the same butter until tender. Mix with tomatoes and mushrooms. Season and pour over chicken. Cover and bake at 350 degrees for 30-40 minutes.

When ready to serve, sprinkle with parsley and chives. May be frozen. Makes 6 servings.
