SPANISH CHICKEN AND RICE 
1 precooked, cleaned and cut into bite-size pieces of chicken or parts to equal 1 chicken
4 c. boiling water
4 med. onions, chopped fine
1 clove garlic, chopped fine
2 c. raw rice
1/2 c. olive oil
1 tbsp. salt (this is about the only food where I definitely add the salt)
2 tsp. paprika
1/4 tsp. pepper
2 tbsp. minced parsley
4 bay leaves
1 tbsp. vegetable salt
1-2 tbsp. bell seasoning or poultry seasoning

Mix onion and oil and let soak for 1/2 hour. Add rest of ingredients to mixture and cook until done about 40 minutes. Rice should be soft. Serves 6.
