SPANISH CHICKEN & RICE | |
8 oz. cooked & boned med. shredded chicken 1/2 c. diced cooked carrots 1 (15 oz.) can tomatoes 1 sm. chopped onion, sauteed 2 c. cooked brown rice 1/2 tsp. thyme 1 tsp. parsley 1/2 tsp. garlic powder 1/4 tsp. pepper Combine all ingredients and simmer 15 minutes. 2 servings. Serve with 1 cup salad. Single serving = 1 protein, 1 vegetable, 1 starch, 1 cup salad. |
