Select a young fryer about 2 1/2 or 3 pounds. Either have the butcher disjoint it or do it yourself. Put into a brown paper bag, 1/2 cup flour, 1 1/2 teaspoon salt and 1/4 teaspoon black pepper. Drop chicken pieces into the flour and shake well to lightly coat them.
Use a heavy skillet for frying with cooking oil about 1 inch deep or use a deep fryer following directions for its use. Heat oil to 350 degrees. Carefully place chicken pieces in the oil, being sure that the thicker pieces are near center of the pan. Cover and cook 10 to 15 minutes.
Turn the chicken pieces and brown, then reduce heat and finish cooking without the cover.
