SOUTHERN FRIED CHICKEN 
Cut up chicken. Dip chicken in seasoned flour. Then dip in egg mixed with water (beaten). Then dip in 1/2 cup flour, 2 tablespoons plain bread crumbs, 1 tablespoon poultry seasoning, 1/2 teaspoon salt, 1/4 teaspoon pepper.

Heat 1 inch corn oil and 2 tablespoons butter until hot. #9 heat in large fry pan. Do not let pieces touch, bigger pieces in middle. Turn down heat to #2 or 3 immediately. Brown on both sides. Turn, cook for 5-10 minutes. Turn again until cooked - about 25 minutes. Brown until crisp again on high heat. Drain on towels. Eat at room temperature, not real hot or cold.
