LAZY DAY GAZPACHO | |
1 cucumber, peeled and seeded 2-4 cloves garlic (according to taste) 1/4 c. Balsamic, red wine or cider vinegar 1/4 c. olive oil 1/2 tsp. salt 1 (46 oz.) can V-8 or tomato juice 1 green pepper, seeded and finely chopped 1 sm. bunch scallions, finely chopped 1 lg. ripe tomato, peeled, seeded and chopped 2 shots Tabasco sauce (optional) Chop half the cucumber coarsely and put in blender jar with garlic, vinegar, olive oil and salt. Process until very smooth. Uncover and gradually add the V-8 or tomato juice until container is full. Transfer to a bowl or tureen and add the remaining V-8 or tomato juice, blending well. Add the remaining ingredients, including the other half cucumber, finely chopped, and chill thoroughly. Serve in glasses or mugs and pass Tabasco sauce around for those who like things spicy. |
