MOCK APPLE BUTTER 
4 c. zucchini, pureed
4 tbsp. vinegar
1 tsp. lemon juice
2 c. sugar
1 tsp. cinnamon
Dash of allspice if desired
2 drops red food coloring

Peel and seed zucchini and chop coarsely. Put in blender with vinegar and blend until smooth. Pour into saucepan with remaining ingredients and cook, stirring occasionally, until mixture reaches desired thickness. Cool and refrigerate.
