CHEESECAKE CUPCAKES 
2 (8 oz. each) pkgs. cream cheese
1 c. sour cream
1 tsp. vanilla
1 tsp. lemon juice
3/4 c. sugar
3 eggs
1 tsp. flour
Paper cupcake holders
Vanilla wafers
Cinnamon

Place 1 package of cream cheese in a bowl with the next 6 ingredients and liquefy. Add the second package of cream cheese and blend. Place 1 vanilla wafer in each cupcake holder. Pour mixture over wafer, filling about 2/3 full. Sprinkle with cinnamon. Bake at 375 degrees for about 18 minutes. Remove from oven, top with fruit if desired.
