CUBED STEAK WITH MUSHROOMS 
4 cubed steaks (about 1 1/2 pounds)
2 tbsp. soy sauce
2 tbsp. oil
2 green onions with tops sliced thin
4 oz. mushrooms sliced thin (about 1/4 cup)
1/3 c. beef broth
Salt and pepper to taste

Brush both sides of the steaks lightly with soy sauce, set aside. In hot oil in a large skillet, cook and stir onions and mushrooms until mushrooms are barely tender (about 3 minutes). With slotted spoon remove and set aside. Quickly pan fry steaks in the hot skillet about 1 minute on each side, do not overcook. Add mushrooms and mixture, simmer until heated (about 3 minutes) stirring occasionally. Season with salt and pepper. Makes 4 servings.
