ZUCCHINI WALNUT BREAD 
1 c. walnuts
2 c. sugar
3 1/2 c. all purpose flour
1 c. raisins
1 c. vegetable oil
2 c. grated zucchini
4 eggs
1 1/2 tsp. salt
3/4 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. cinnamon
1 tsp. vanilla

Chop walnuts into medium size pieces; beat eggs; gradually beat in sugar, then oil. Combine dry ingredients; add to first mixture gradually with zucchini. Stir in raisins, walnuts and vanilla. Pour into 2 greased, lightly floured loaf pans. Bake in lowest rack at 350 degrees for about 55 minutes. Let stand 10 minutes, turn out onto wire racks to cool. If desired, loaves may be lightly glazed with powdered sugar mixed with a little cream. Makes 2 loaves.
