BEEF ENCHILADAS 
1 lb. ground beef
1 med. onion, chopped fine
1/2 green pepper, chopped fine
Salt and pepper to taste
1-2 tsp. chili powder or chili blend
1 can tomato sauce
1 pkg. either flour or corn tortillas
Grated Colby Longhorn cheese

Brown ground beef along with onion, green pepper, salt, pepper and chili powder. Then add 1 small can tomato sauce and simmer until thick. Set aside.

In small skillet, make a weak sauce from 1/2 cup water, 1/2 cup catsup, about 1/2 to 1 teaspoon chili powder and simmer. Now dip tortilla into hot sauce to soften. Place on a plate and put 1 to 2 tablespoons meat mixture and some grated Longhorn style cheese in the center of each tortilla. Now roll up and place seam down in greased 9x13 inch pan.

Repeat until all meat mixture is used. Pour remaining sauce over enchiladas, top with grated cheese and bake at 350 degrees for about 30 minutes.

NOTE: If you should run out of the weak sauce, just make another batch and continue. You will need some to pour over the enchiladas to bake them.
