SUPER-NATURAL BRAN MUFFINS | |
1 c. bran (or whole bran cereal) 1 c. boiling water 1/2 c. vegetable oil 1 1/4 c. brown sugar 1/4 c. honey 2 eggs 2 c. buttermilk 2 1/2 c. whole wheat pastry flour (or 1/2 white and 1/2 whole wheat) 2 1/2 tsp. baking soda 1 tsp. salt (or less) Stir together bran and hot water. Cover and let stand. Meanwhile, in a large bowl, combine the oil, sugar and honey and mix well. Beat the eggs into oil mixture. Add and mix in the buttermilk and bran. Slowly blend the flour, soda, salt and oats in with the batter. Cover and refrigerate for several hours or keeps up to 3 weeks. Spoon the batter into greased muffin tins. Bake in preheated 350 degree oven for 25-28 minutes or until lightly browned and a toothpick inserted in the center of a muffin comes out clean. Serve warm with butter. Variations: Before baking, add cinnamon, raisins, nuts and/or chopped fresh fruit. |
