RICE BROCCOLI BAKE 
1 med. diced onion
1/4 c. butter
1 can cream of mushroom soup
2 (10 oz.) pkgs. frozen broccoli, thawed and drained
1/2 c. sour cream, thinned with a little broccoli juice
2 1/2 c. cooked rice
1/2 lb. grated cheddar cheese
3/4 c. buttered bread crumbs

Saute the onion in the butter and add everything except the bread crumbs. Pour into buttered 8 x 8 inch pan and top with crumbs. Bake at 350 degrees for 30 minutes covered and 15 minutes uncovered. Crumbs can be added the last 15 minutes.
