DOUBLE - QUICK DINNER ROLLS 
1 pkg. yeast
1 c. warm water
2 1/2 c. flour
2 tbsp. sugar
1 tsp. salt
1 egg, beaten
2 tbsp. shortening, melted

In a large bowl, dissolve yeast in water. Stir 1/2 the flour, sugar and salt into yeast. Beat until smooth. Add egg and shortening. Add remaining flour. Scrape sides of bowl and cover with a cloth; let rise in a warm place until double, about 30 minutes. Meanwhile, grease 12 large muffin cups. Stir down raised dough. Spoon into muffin cups. Mixture will be runny. Fill cups half full. Let rise again in warm place, 30 to 40 minutes. Heat oven to 400 degrees. Bake 15 to 20 minutes until golden. These are easy and delicious!
