BARBEQUE BEEF SANDWICHES 
6 SERVINGS:

2 lbs. round steak
1 med. onion, sliced
1.c water
1 1/2 tsp. vinegar
1/2 tsp. salt
1/4 tsp. pepper
1/2 c. ketchup
1/2 c. chopped celery
2 tbsp.b brown sugar
3 tbsp. Worcestershire sauce
2 tsp. soy sauce
1 tbsp. dry mustard

220 SERVINGS:

100 lbs. beef round (sliced in steaks)
50 onions, diced
50 c. water
4 2/3 c. vinegar
Salt and pepper both sides of meat while browning
25 c. ketchup
25 c. chopped celery
6 1/4 c. brown sugar
9 1/3 c. Worcestershire sauce
2 c. soy sauce
3 c. dry mustard

Brown beef in butter. Sprinkle with salt and pepper. Add onions and brown a bit. Add water and remaining ingredients. Simmer until meat shreds easily with a fork (4 to 5 hours). Stir every 30 minutes. Cook down. Can be frozen. Reheats well.

Serve on sliced bread rolls with tossed salad. Garnish with fruit skewered on a kabob stick.

Large quantity good for fundraisers, reunions, parties and weddings. Preceed dinner with a chili cook off, serving mini corn muffins and sodas.
