POTATO-BASIL BAKE | |
3/4 lb. boiling potatoes, cooked, peeled and thinly sliced (2 or 3 sm. to med. potatoes) 1/4 c. minced fresh basil 1 lg. clove garlic, minced 1/2 c. shredded Monterey Jack cheese Salt and pepper 1 egg, beaten 1/3 c. whipping cream Butter 1-quart glass baking dish. In order, layer sliced potatoes, basil, Jack and cheese. Sprinkle with salt and pepper. Stir together egg and cream and pour over cheese. Dot top with 1 tablespoon butter. Bake at 325 degrees or until firm and golden brown, about 30 minutes. Remove from oven and set aside 10 minutes to firm up. Makes 2 servings. |
