OVERNIGHT FIESTA SALAD | |
1 (15 1/2 oz.) can kidney beans, drained 1 med. onion 2 med. tomatoes (unpeeled, coarsely chopped) 1/2 c. celery, chopped 1/2 c. green pepper, chopped 1/2 c. commercial French dressing 1 sm. head lettuce, torn into pieces 1 c. shredded cheddar cheese 3 hard cooked eggs, chopped 1 c. crushed corn chips Layer first 9 ingredients in order listed in a large salad bowl. Wrap tightly. Refrigerate several hours or overnight. Top with corn chips before serving. Serves 6. |
