ZUCCHINI CASSEROLE 
2 or 3 med. size zucchini, sliced
Crisco shortening
2 beaten eggs
2 tbsp. water, or more
1 (15 oz.) can tomato sauce
Parmesan cheese
Flour

Fry zucchini in skillet with shortening until brown (zucchini should be dipped individually in beaten eggs and water mixture, then dipped in flour). Layer in an 8 x 8 inch pan and put 1 tablespoon of sauce on each piece.

Between each layer, sprinkle cheese. Continue until done. Then left over sauce can be evenly spread over top of zucchini and sprinkle again. Bake at 350 degrees for 1/2 hour covered with foil and 15 minutes uncovered.
