SPINACH BALLS | |
1 (10 oz.) pkg. frozen chopped spinach 1 cup herbed seasoned stuffing mix 2 eggs, lightly beaten 1/2 cup Parmesan cheese, grated 1/3 cup melted butter 1 tsp. instant minced onion dash of ground nutmeg Thaw & drain spinach well. Lightly grease baking sheets. In a small bowl mix spinach, stuffing mix, cheese, eggs, butter, onions and nutmeg until well blended. Shape into small balls, using one teaspoon of mixture for each ball. Place on baking sheet, cover and refrigerate at least 4 hours. Preheat oven to 350°F. Bake spinach bites for 10 to 15 minutes, or until bottom begins to brown. Submitted by: Judy Brannock |
