ORANGE - COCONUT PIE 
1/4 c. butter, softened
1 c. sugar
3 eggs, beaten
1/2 c. orange juice
1 tsp. lemon extract
Dash of salt
1 c. flaked coconut
1 unbaked 9-inch pastry shell

Cream butter; gradually add sugar, beating well at medium speed of electric mixer. Add eggs, and beat until blended. Stir in orange juice, lemon flavoring, salt, and coconut, mixing well.

Pour into pastry shell. Bake at 350 degrees for 45-50 minutes or until a knife inserted in center comes out clean.
