CRUSTLESS COCONUT PIE 
4 eggs, well beaten
1/2 c. flour
1 3/4 c. sugar
1/2 stick butter, melted
1 tsp. vanilla extract
1 tsp. lemon juice
2 c. milk
1 (6 or 7 oz.) pkg. coconut

Combine ingredients. Pour into 2 greased 9-inch pie pans. Bake at 325 degrees for 40 minutes - may need a little longer.

You can use aluminum foil cake pans or deep pie pans and freeze one pie for later.
