CHICKEN - BLACKEYE PEA CASSEROLE | |
1 chicken, cut up or favorite pieces (about 4 or 6 pieces) 2 cans blackeye peas (Hanover Brand is good) 1/2 c. sliced onions, (and/or garlic) Greek seasoning 1 (8 oz.) smoked sausage, sliced (optional) Season chicken with Greek seasoning or salt and pepper. Place in baking dish layered with onions. Pour over this the undrained blackeye peas. Sprinkle again with Greek seasoning and more onion if desired. Bake, covered at 350 degrees for 45 minutes or longer. |
