MEXICAN APPLE SALAD 
Great for hot summer nights! In our family it is tradition to make for Thanksgiving and Christmas!

5 Granny Smith apples
1/4 cup raisins
1/4 cup shredded carrots
1/4 cup walnuts
1/2 cup sour cream*
1/4 cup granulated sugar*
1/2 tbsp. cinnamon
1 tsp. vanilla extract

Combine sour cream, sugar, cinnamon, and vanilla in a large bowl and set aside.

Cut apples in to bite size pieces and add to Sour cream mixture. Fold in the walnuts, shredded carrots and raisins. Cool for about 30 minutes and serve for dessert!

Note: I usually like to make this salad sweeter and creamier so you can add more sugar or sour cream to achieve personal taste.
