LOW CALORIE BANANA MUFFINS | |
1 1/2 c. whole wheat flour 3 ripe bananas, mashed 1/2 c. bran or wheat germ 1/2 c. apple sauce 1/4-1/2 c. sugar (depending on ripeness of bananas) 1 tsp. vanilla 1/2 tsp. salt 2 tsp. baking powder 1/2 tsp. cinnamon 2 eggs 1 c. chopped walnuts, optional Combine mashed bananas and sugar, then add eggs and apple sauce. Blend until smooth; add vanilla. In a separate bowl combine flour, bran, salt, baking powder, and cinnamon. Gradually add flour mixture to banana mixture and stir until batter is uniformly moist. Add nuts, if desired. Bake in a 12-cup muffin tin sprayed with non-stick spray at 400°F for 25-30 minutes. Cool muffins on rack for 10 minutes. 12 Servings.
