MERRILL'S PINK POTATO SALAD | |
Potatoes Hard boiled eggs Kraft Catalina French dressing Hellmann's mayonnaise Salt Paprika Start the day before you plan to serve. Peel, cut up and boil potatoes in salted water to "firm - soft". Cool. Put in large bowl and pour some Catalina on, toss potatoes to cover with the dressing, keep adding dressing and tossing until all potatoes are coated and there is a bit of extra dressing in bottom of bowl. Cover and refrigerate overnight. In the morning, remix, add hard boiled eggs to taste, now start adding the mayonnaise in the same manner as you did the Catalina, tasting as you do it. Add a little salt, mix, taste until you think it's good. Cover and refrigerate until time to serve, serve on a lettuce leaf and garnish with paprika. (Adds taste, color and Vitamin C.) If kept covered and cold this salad keeps very well. |
