RICH CHRISTMAS PUDDING 
2 oz. flour
4 oz. bread crumbs
1 tsp. mixed spice
1 tsp. cinnamon
1 tsp. nutmeg
4 oz. shredded suet (or melted butter)
4 oz. brown sugar
4 oz. grated apple
1 sm. grated carrot
4 oz. mixed candied peel
Little grated orange rind (optional)
2 oz. prunes & dried apricots, chopped (optional)
2 eggs
4 oz. currants
4 oz. sultaanas
8 oz. raisins
2 (4 oz.) chopped blanched almonds
Grated rind 1/2 lemon
Juice 1/2 lemon
1 tbsp. black treacle or golden syrup
1/4 pt. beer, ale, stout or milk, or use part beer, part brandy

Mix all the ingredients together. Stir well, then leave overnight. This gives a much better flavor. Place in your container or containers. Cover well with cloth or greased paper and steam for 5-8 hours, depending on the size. Take off the wet covers and put on dry ones when cooked. Resteam on Christmas Day.
