CHRISTMAS PUDDING 
Process in food processor or chopper:

1 c. potatoes
1 c. carrots
1 c. apples

Measure:

1 c. sugar
1 c. plus 1 tbsp. flour
1 c. candied mixed fruit
1 c. currants
1 tsp. baking soda
1 tsp. salt
1 tsp. nutmeg
1 tsp. cinnamon
1 tsp. allspice
1 tsp. vanilla
1/2 c. shortening
1 beaten egg

Grease 3 (1 pound) coffee cans. Cream sugar and shortening. Add egg and all other ingredients. Fill coffee cans 2/3 full. Cover; steam 3 hours. Before serving, slice in desired thickness, top with a small amount of lemon sauce. Dip sugar cubes in enough lemon extract to moisten them, then place on top of each serving, light with a match and carry to the table. (Children especially like the lighted cubes.)
