COCONUT CREAM PIE FILLING 
3/4 c. sugar
3/8 c. flour
1/4 tsp. salt
3 egg yolks
2 c. milk
1 tbsp. butter
1 tsp. vanilla or coconut flavoring
1 c. coconut

In a saucepan, mix sugar, flour and salt. Add eggs and milk. Beat with wire whisk until smooth. Bring to boil over medium heat. Stir constantly. Continue cooking and stirring until smooth and thick. Remove from heat and stir in butter and flavoring. Cool 5 minutes. Pour into cooked pie shell. Put meringue on top and sprinkle coconut over it and bake in oven until brown.
