BLUE AND PINK SUNDAE 
2 c. blueberries (fresh or frozen but thawed)
2 tbsp. brown sugar
1 tbsp. water
2 tsp. lemon juice
1/2 tsp. vanilla extract
Pinch of cinnamon

Heat berries, brown sugar, water, and cinnamon over low heat, stirring until sugar dissolves. Cover and simmer 5 minutes or until berries burst. Uncover and simmer to thicken (about 2 minutes). Stir in lemon juice and vanilla. Serve warm over strawberry ice cream. Sauce can be refrigerated and reheated to serve.
