FRENCH VANILLA ICE CREAM 
4 egg yolks
3 sqs. chocolate
2 1/2 c. top milk or Half and Half
3/4 c. sugar
1/8 tsp. salt
1 pt. heavy cream
2 tsp. vanilla

Melt chocolate. Scald milk in double boiler. Add 1/2 of milk slowly to chocolate and blend well. Add remaining milk slowly to slightly beaten egg yolks. Combine mixtures. Add sugar and salt. Cook in a double boiler to form custard. Cool. Add heavy cream and vanilla, mix well and chill. Pour into ice cream maker until it becomes firm ice cream.
