MAMA'S BANANA PUDDING 
3/4 c. sugar
3 tbsp. flour (all-purpose)
Dash of salt
4 eggs
2 c. milk
1/2 tsp. vanilla
5 to 6 med. bananas
Nilla wafers

Combine 1/2 cup sugar, the flour and salt in top of double boiler. Mix in 1 whole egg and 3 egg yolks. Stir in milk. Cook uncovered over boiling water. Stir constantly until thickened. Remove from heat. Add vanilla flavoring. Spread small amount on bottom of 1 1/2 quart casserole dish. Cover with layer of wafers, then layer of banana. Pour about 1/3 of custard over banana.

Continue to layer wafers, banana and custard to make 3 layers of each, ending with custard. Beat remaining 3 egg whites stiff, but not dry. Gradually add remaining sugar. Beat stiff peaks. Pile onto pudding. Bake in preheated oven at 425 degrees for 5 minutes. Serve warm or chilled.
