RICH BANANA CAKE 
1/2 lb. butter
1/2 lb. sugar
5 eggs
3 tbsp. evaporated milk
3 tsp. vanilla
2 tsp. lemon juice
6 bananas, green, mashed
3/4 lb. self-rising flour
1 tsp. baking powder

Preheat oven to 375 degrees. Grease two 8-inch round cake pans with butter. Line pans with parchment paper. Beat butter and sugar together until fluffy. Add milk, vanilla, lemon juice, and bananas. Beat for 2 minutes. Fold in flour and baking soda until thoroughly mixed.

Place equal portions in each of the 2 cake pans. Place in oven and bake about 45 minutes. Cake is done when toothpick inserted in middle comes out clean. Cool on racks. Serve with whipped cream, chocolate sauce, or your favorite frosting if desired. Serves: 6-10. (Prep and Cooking Time: 1 hour)
