SUGARED PECANS 
1 lb. pecan halves
1 egg white
1 tsp. vanilla or brandy
1/2 c. sugar
1 tsp. cinnamon
1 tsp. salt

Beat egg white and vanilla together in a large bowl. Mix dry ingredients in another large bowl. Coat pecans first in egg mixture, then stir them in sugar-spice mixture. Spread in buttered shallow pan and bake at 200 degrees for 40 minutes to 1 hour, stirring every 10 minutes.
