GOLDEN PUMPKIN CAKE WITH CREAM
CHEESE TOPPING
 
1 pkg. Duncan Hines yellow cake mix
1/2 c. cooking oil
4 eggs
1 c. canned (or fresh) pumpkin
1/2 c. sugar
1/2 c. water
1 tsp. cinnamon
1/2 tsp. nutmeg

Place cake mix in large bowl. Pour in oil and add eggs one at a time, beating after each addition. Add pumpkin, sugar, and spices and mix. Bake in well- greased and floured tube pan at 350 degrees for 60-70 minutes.

CREAM CHEESE TOPPING:

1 box confectioners sugar
4 oz. cream cheese
1/2 stick butter

Mix ingredients together and spread on cake.

My husband made this cake today using our new KitchenAid stand mixer. A couple thins the recipe omits that he had to ask me about: when to add the water and what position the oven rack should be in for a tube pan. He "cheated" by using canned cream cheese frosting but it turned out great. I think crushed pecans in the frosting would be a great add to the recipe.
